Anybody brewed any wine lately?
I am on my first attempt in Thailand at making wine. It a rice and raisin recipe which I got over the net.
The trouble is (which I knew would happen) in the Thai temperatures it ferments too fast. I've had this before in another warm country, but it didn't seem to ruin the brew.
I'm no expert by any means and have only made a few fruit wines before.
Anyway, I put the rice and raisins in a bucket (primary) along with water, sugar and a little pectolase, oh and juice and zest of 4 limes.
Made a yeast starter from the must with Wilco's wine yeast and stirred for 5 days. It was happy, bubbling away.
Siphoned off into large water bottle and fit airlock............2 days later, fermentation stopped.
I'll leave it for about a month to settle and then rack into another bottle and add some campden and then give it another week or so to see if any further fermentation, and to make sure it clears.
Recipe says it cleans up very quickly and is ok to drink straight away.
I'll post results later if anybody is interested.

I've never brewed beer and am a real ale guy, but I will read up on your posts and see if its possible for me to do. I doubt I could source the equipment and ingredients, but lets see first.
I saw some posts for alcoholic ginger beer, it looks easy and interesting, so that might be my next challenge!

It's fairly easy to get hold of grapes in Thailand and make wine the conventional way. As with brewing beer, you need a cool place or unit to store your product during fermentation.

Thanks for the replies. I'll wait and see how the wine turns out, then might do a papaya one and also the ginger beer.
When i get chance, I'll read up a little on beer equipment and ingredient costs and see if its something I would like to do. I mean, I'd love a decent drink of ale instead of having to drink lager, but depends on costs.
