I think I'm going to drop the 30g of challenger at 60 min down to 20g.... From my first attempt at this I think it was a little too bitter.

I'd also like to change the crystal to 10l but have only found 60l here.

Glad you enjoy the beer, I'm making my way through version one and it is very nice. Definitely benefits from 4 weeks conditioning.

That might just do it rather than adding more cascade actually.

After the taste pint last night, i'm struggling to leave it to settle longer!

Glad it's turned out well.... Trust me tho, 4 weeks will work wonders if version one is anything to go by.

Try the Castle Malting crystals… Cara Clair, Cara Blonde… Cara Ruby is a lovely malt too, adds a nice & sweet "i don't know what" in small doses. Superb colour too :)

Ok, so i've just been and picked up some actual bottles of RC from the new brewery.

The only thing I think that needs changing is what's been said earlier, the challenger definitely needs dropping slightly. Don't get me wrong, your recipe for version 2 tastes amazing, but it could do with a slight drop of challenger early in the boil....then I think it could be cock on!

Have you tried making this again Lee? Was back home for the Xmas and had a few pints of Rivet... my version definitely needs less bittering hops and it wont be far off. I also think the late hop additions could be reduced slightly if you wanted it to get even closer to the original. My Rivet Clone definitely has a more pronounced aroma than the original which I think I prefer.
